Many cities have a certain style of taco that are served at most of their trucks, and Merced is no different. Trucks like Tacos Y Mariscos Sinaloa and Tacos Durango are good examples of what that style entails. Danny’s Tacos instead breaks the mold and offers its own style, more akin to some southern California “cantina” tacos, with a little twist.
The most important aspect of these tacos is the tortillas, flour tortillas that almost feel like they have been steamed as they are so soft, pillowy, but most importantly, moist. These tortillas are not dry at all, and do a great job soaking up the flavor of the meat.
The asada is very moist as well. Instead of being charred off crispy, it maintains a lot of its marinade after being cooked and ends up incredibly juicy and flavorful. The carnitas is also far from dry, its crisped up slightly and soaks up the flavor of the salsa to complement the pork.
Speaking of which, both salsa options, red and green, are a nice burst of tangy, citrusy freshness that cuts through the rest of the taco. The green is very tomatillo forward with a lot of vegetal notes, while the red is a bit more subdued, but also spicier, giving a lot of roasted flavor.
