Tacos El Granero #4 is a very good representation of what I would call a “Turlock style” taco. Most of the taco trucks down the Golden State Boulevard through Turlock demonstrate these qualities, but a great example of the archetype comes with this truck in particular.
The first matter to note: the tortillas. They are generally corn, and are fried off in a good amount of oil or fat on the plancha so that they have a soft crisp snap with each bite. The flavors of the meat from the fat soak in to the tortillas from the plancha. Aside from texture and fattiness, the tortillas have a very rich corn forward flavor, and Tacos El Granero #4 puts these on display perfectly.
The asada is very moist and tender, crisped off just a bit, but not as much as many other trucks in the valley like to. It is also chopped into rather small pieces, just like you see in the picture at this truck. The salsa is very punchy, and often pretty spicy, though Tacos El Granero #4’s salsa is not too intense.
Finally, the garnishes are minimal. Just cilantro and onion on the tacos, some lime, and a type of chile, in this case a pickled jalapeño. All of these factors make for a very simple and clean tasting taco that is perfect either for a quick lunch or for after a night of drinking downtown.
